Meet Truffle Honey, Lime Confetti, & The Ricotta Crostini

Lace honey with truffle oil, add lime zest and cool ricotta and we’ve got an UBER easy vegetarian appetizer.  Don’t get me wrong, I love meat but this beats a heavy meat course when you want something light yet filling (just looking at it makes me drool).

1 French baguette
2 Limes
Black truffle oil, to taste
1 Cup Honey
2 Cups Ricotta Cheese
Freshly ground black pepper

Preheat oven to 350.

1. Slice French baguette on the bias and lightly brush with olive oil. Add the slices, in an even layer, to a sheet tray. Place in the oven until golden brown, about 5 – 7 minutes.

2. Mix honey and a small dash of truffle oil, taste and adjust seasoning.

3. Remove the crostini on to a plate and let cool.

4. Spread the ricotta on the crostini and drizzle with honey. Add black pepper and zest lime on top.
