Oh My! Lamb Meatballs with Golden Lentils & Curry Mint Yogurt
Greetings, Meatballs. There is nothing like a Spring seasonal-food dinner party to celebrate the end of winter-hibernation, warm dewy days and extended daylight. Spring Lamb and cool mint yogurt welcomes us back to dinner party plates and picnic-food! Enjoy Spring entertaining with an easy lamb appetizer.
Serves 15
Lamb Meatballs
1 lb Ground lamb
1 lb Ground turkey
3 Tbsp Chopped mint
2 Shallots, dice
3 Garlic cloves, dice
1 tsp Curry
1/2 tsp Smoked paprika
1 tsp Pepper
2 tsp Kosher
Golden Lentils
3 Cups Yellow lentils
3 Cups water
Kosher salt, to taste
Parsley, chop – garnish
Curry Mint Yogurt Sauce
3 Cups Plain Greek yogurt
1 tsp Curry powder
1/4 tsp Cumin
Dash of Smoked paprika
2 tsp Chopped mint
1 Tbsp Fresh lemon juice
Kosher salt, to taste
Preheat oven to 350.
Add 3 cups of water in a large pot on high heat.
Lamb Meatballs
1. Mix all lamb ingredients in a bowl and roll into radish-sized balls.
2. Lightly coat a large sauté pan with canola oil and place on medium-high heat. Set a clean sheet tray close by to add the seared meatballs to.
3. Once the pan is hot, add lamb meatballs to the sauté pan in batches of 12 and sear on all sides until just brown, less than 1 minute per side. Place the meatballs on the sheet tray and in the oven to cook through, about 3 minutes.
Golden Lentils
1. Bring the large pot of water to a boil and lower to a simmer. Add lentils with salt to taste.
2. Cook, covered, until it has a light bite, about 10 minutes. Drain in a colander.
Mint Curry Yogurt Sauce
Mix all ingredients and set aside for 30 minutes for flavors to blend. Taste and adjust seasoning.
Plating Lamb Meatballs with Golden Lentils and Curry Yogurt
Add lentils to a shallow bowl or plate. Place meatballs on top and garnish with chopped parsley.
Place curry yogurt in a bowl and garnish with a mint leaf.
