Small Plate: Gold Plantain Chips!

Who’s to say gold is just some hard metal that you can’t eat (C’MON)? Gold can define deliciousness. Tostones, plataninas, bannan fris, ipekere, plantionas (I just made that one up) in every language, plantain chips are banana’s golden-fried cousin and make for beautiful, crisp, salty and slightly sweet appetizers. All you need are 3 ingredients and 5 minutes…

Fried Plantain recipe, Dresses & Appetizers

Serves 6

Fried Plantain Chips
2 Plantains, thinly slice lengthwise
Sea Salt
Canola Oil

Set your deep-fryer to 350. If you don’t have a deep fryer, add oil to fill half of a 5-quart deep pot and measure the heat with a cooking thermometer.

1. Thinly slice plantains, lengthwise, on a mandoline or use a peeler. Test 1 plantain in the deep fryer to make sure the fryer is the right temperature (if it burns quickly – reduce the heat, if it doesn’t sizzle when the plantain is added – increase the heat). When the fryer is ready, add the plantains in small batches. Fry until golden, about 45 seconds.

2. With a spider or slotted spoon, remove the plantains to a paper towel-lined tray and lay in an even-layer. Sprinkle sea salt on top while hot and eat up!

    This recipe is pure gold. I crave tostones, My mom would make them and I’d always sneak them from the plate before she was finished.
