Ingredients

1 cup grilled Mango Puree
750 ml Prosecco
1 small slice of grilled mango

Directions
1. Fill a champagne flute one-third full with mango juice. Top with champagne and stir gently. Garnish with a slice of mango.

Sweet Grilled Mango
Ingredients

2 ripe mangoes, skin on, sliced 2-inches thick
4 Tbsp. granulated sugar
6 skewers, soaked in water
Canola oil

Directions
1. Brush the grill with oil and set it to high heat.

2. Evenly sprinkle sugar on the each side of the mango. Place the mangoes on skewers.

3. Once the grill is warm, place the mangoes on the grill. Grill the mango until grill marks begin to show, about 2 minute per side. Remove skin when adding to a mixed drink.

To make grilled mango puree. Add 1/2 cup of sugar to 1/2 cup of boiling water, remove from heat and  stir until sugar dissolves. Let cool. Grill mangoes until very soft and add to a food processor with sugar syrup, blend until smooth.

    Anything to do with mangoes gets my attention and I like the whole mimosa but with mango juice idea.

    (Although, my French friends would crucify me if they knew i was mixing my champagne with something else. :-P)
